To dine at Casa Ceibo is to experience a taste of Ecuador. The difference between this restaurant's elite, epicurean specialties and other regional dining within this area of the world lies in its internationally award-winning menu, presentation and service.
For Casa Ceibo, food is a focal point of every guest's stay, lingering not just on the taste buds but in the memories of a vacation that's exclusive, exotic, exquisite — truly Ecuadorian! Each daily menu features divine dishes that speak to favorite regional flavors, and integrate the very best of European and international traditions.
As guests journey through the courses of a meal — be it breakfast, lunch or dinner — they'll notice that Casa Ceibo's restaurant is much more than just a place to eat. Simply beautiful, the dining area and its very intimate bar easily give guests the excuse they crave to linger a little longer. It's where people gather to relax amid a very refined, luxurious ambiance. It's also where they're likely to hear stories about how Casa Ceibo came to be, and the history and hands that went into designing and building such an architectural and aesthetic marvel.
Featured prominently, hanging in the restaurant and bar's entryway, is a massive mural of the legendary Ceibo tree, commissioned exclusively for Casa Ceibo by Ecuadorian ceramicist and designer Eduardo Vega. Pablo Mora, another notable, Ecuadorian artist, handcrafted the room's decadent stained-glass chandelier and all the stained-glass accessories that adorn every tabletop, not to mention other design curios throughout the hotel. From every vantage point, luminous wood features and accents frame and complement one another in spectacular harmony. Decidedly sophisticated, yet unpretentious, the restaurant and bar put people at ease.
At Casa Ceibo, guests are welcome to take their meals on the restaurant's outside terrace, a perfect vantage point for the jeweled pool below and the gardens beyond, which provide a playground to 50+ species of birds. A shady, poolside grill, featuring both traditional seating and a swim-up bar is also open, serving refreshing beverages, plus lunch and dinner upon request.
Casa Ceibo's fully stocked bar offers house beers, house reds and whites, with other wine labels available day and night. Hospitality is key at Casa Ceibo, which is known for a variety of signature cocktails and non-alcoholic, fresh-squeezed frosty or frozen fruit beverages — blackberry smoothies, melon juices, lemonade rose and more. Here, guests cozy up to enjoy their beverage of choice, chatting with our friendly bartender or perhaps other hotel guests. Also in the restaurant, bar and nearby lobby, Casa Ceibo serves rich, Ecuadorian coffee and specialty teas.
